With just 3 ingredients, these are a winner in my house.
Gluten, dairy, refined sugar free and nut free
A great source of fiber and fat to promote blood sugar regulation so you feel fuller for longer
100g desiccated coconut
250g soft dates
1 tbsp good vanilla extract (Taylor & College)
Blend in processor til combined. Shape into 14 golf balls. (Double quantities in the photo)
Store in fridge for 2 weeks, if they last that long!
For a decadent treat you could dip with melted dark chocolate.
